30 Days No Meat, No Alcohol: Spinach Mushroom Alfredo Recipe

While on my 30 Days No Meat, No Alcohol fast I made a dish that everyone really liked. Since then several people have asked me for the recipe. Hope you enjoy this meatless recipe as much as I did.

Spinach Mushroom Alfredo

I used the Alfred recipe from Olive Garden

Alfredo Sauce

Prep Time: 10 Min Cook Time: 10 Min Serving Size: 4

Ingredients 1 1/2 cup milk 1 1/2 cup heavy cream 1/2 cup imported Parmesan cheese, grated 1/2 cup imported Romano cheese, grated 6 egg yolks from fresh jumbo eggs Salt and black pepper to taste

Procedures 1. HEAT milk and cream in a heavy bottom saucepan until it begins to simmer. Turn off heat. Slowly whip in cheese, and then remove from heat. 2. PLACE egg yolks in a separate bowl and slowly whip in a portion of the hot milk and cream mixture. Slowly add egg yolk mixture back into remaining cream mixture. Place back on very low heat and continually stir until simmering. Take sauce off heat so it thickens. (This will increase temperature of egg yolks, known as tempering). 3. SEASON to taste with salt and black pepper. Serve over your favorite pasta.

Spinach Mushroom Alfredo

1 Bag of Fresh Spinach Leaves 1 Container Mushrooms 1 Garlic Clove 1/2 Onion

Sautee spinach leaves, mushroom pieces, chopped onion, and garlic cloves in a pan with 1 ½ tablespoons of olive oil. Lightly stir until spinach is fully wilted and then add Alfredo Sauce.

Serve over fettuccini noodles. Sprinkle fresh lemon juice and basil on top for added flavor.
